Peanut Butter and Banana Green Smoothie

I don’t have children, but I can imagine that trying to get them to eat their veggies daily can be…umm…challenging. 

When I was little, I wanted nothing to do with anything green. Broccoli? No way. Spinach? Won’t touch the stuff. Green beans? Heck no!

Now, of course, those are some of my favorite foods. But 15 years ago you were more likely to see me throwing hissy fits at the dinner table then agreeing to eat anything remotely healthy. 

I was thinking about this when I was drinking my green smoothie the other day.

This smoothie, made green by the addition of tender baby spinach leaves, tastes nothing of vegetables. When I take a sip of this smoothie, the first thing I taste is creamy peanut butter. 

Spinach, although packed with vitamins and physically a bright green color, has such a mild taste that it’s completely overshadowed by the banana. The banana hides all that earthy flavor and gives way for the peanut butter (or any kind of nut butter you like) to really shine. 

The first time I tried this smoothie I have to admit I was skeptical. But it’s true! No spinach flavor-no veggie flavor at all.

Peanut Butter and Banana Green Smoothie

Ingredients
  1. 1 small frozen ripe banana, peeled
  2. 2 cups baby spinach
  3. 1 tbsp peanut butter (or nut butter of choice)
  4. 3/4 cup milk of choice
  5. 1/2 cup plain fat-free Greek yogurt
Instructions
  1. Place all ingredients into a blender and blend until smooth and creamy.
