Beef & Quinoa Cheesy Stuffed Peppers Recipe

By Lindsey 3 Comments

Beef and Quinoa Stuffed Peppers
I have to admit when I whipped this up last night I was not sure how my children were going to react.  Imagine my surprise when all of them asked for seconds and my husband even said he really liked it.  This will be a new staple on the menu plan!  I hope you like it!

Ingredients
  1. 1.) 1 lb. ground beef
  2. 2.) 6 green peppers, al dente
  3. 3.) 2 cloves of garlic, minced
  4. 4.) 1 tsp. Italian seasoning
  5. 5.) 1/2 tsp. cayenne pepper
  6. 6.) 1/2 tsp. onion powder
  7. 7.) 1 tsp. salt
  8. 8.) 1/4 tsp. cracked black pepper
  9. 9.) 1 cup mozzarella, shredded
  10. 10.) 1 cup Quinoa, cooked
  11. 11.) 1 can tomato sauce
  12. 12.) 1/2 cup Parmesan cheese, shredded
Instructions
  1. 1.) Preheat oven to 400 degrees Fahrenheit.
  2. 2.) Cut tops off of peppers and strip our seeds and membranes.
  3. 3.) Fill a large stock pot about halfway full of water and bring to a rolling boil. Add peppers and boil for no longer than 4 minutes. Remove from water and add to 9x13 baking dish and allow to cool.
  4. 4.) Bring 2 cups of water to a boil and add 1 cup of uncooked Quinoa. Allow to simmer for about 15 minutes until cooked. Quinoa should still be somewhat firm but have the "spirally effect" that cooked quinoa has.
  5. 5.) Saute ground beef with garlic, onion powder, salt, pepper, cayenne and Italian seasoning. Once meat is browned, drain off excess fat.
  6. 6.) Mix seasoned cooked beef with tomato sauce, quinoa, and mozzarella in large mixing bowl. Mix thoroughly.
  7. 7.) Spoon meat mixture evenly into peppers that should already be in 9x13 baking dish. Top with Parmesan cheese.
  8. 8.) Bake in preheated oven at 400 degrees Fahrenheit for 25 minutes.

I am a wife to a wonderful husband and mother to four beautiful children five and under: three girls and one boy. I am a disciple of Christ and I am fulfilling my role to my husband and family as a homemaker. I began The Road to 31 almost two years ago in an effort to focus more as I studied the Word of God and researched those things which were important to me. I found that God used The Road to 31 within my own life to bring community to my front door and allowed me to minister and be ministered to by other women who are walking along the same road as I.
